Whisk the yolks with 60 grams of sugar until they form a frothy and clear cream. Incorporate the smooth mascarpone to the yolk mixture, and continue whisking.
  2. For the egg whites, use an electric beater to whisk 60 grams of sugar until they become firm and white like snow. Gently fold the egg whites into the yolk and mascarpone mixture with a spoon, and refrigerate for at least an hour to firm it up.
  3. In the meantime, prepare the coffee, sugar, and Marsala mixture. Ensure it’s not too hot and mix it all in a bowl.
