I’m a huge fan of Nutella! It’s the ultimate breakfast spread for us Italians – a staple with our morning bread. Whenever you visit an Italian hotel for breakfast, you’ll always find a jar or basket filled with Nutella single servings. It’s a must-have in our culture, and I was thrilled to learn that Nutella is just as beloved worldwide.

Though, I’ve noticed that Nutella’s flavour has evolved over time. It seems much sweeter nowadays, almost too sweet for my liking. As someone with a serious sweet tooth, that’s saying something! So, I decided to take matters into my own hands and create my own version – with less sugar and absolutely no palm oil. I’ve never been a fan of palm oil, to be honest. Instead, I opted for cocoa butter, the star ingredient in all the finest chocolates.

After a bit of experimenting, I finally nailed the recipe. Now, I can taste that delicious gianduja flavour that I adore so much – and my kids love it too! So, let’s roll up our sleeves and make it together!

It all started back in 1925 in Turin with Pietro Ferrero’s simple yet genius idea to create a cocoa treat for the hardworking folks in the local industries. That’s how the “Pastone” was born – a cocoa sweet shaped like a block to enjoy with bread.

Fast forward to the post-war period, and Pietro’s innovative spirit led him to experiment with hazelnuts as a key ingredient.

And voila! The gianduja paste was born, named Gianduiotto after the beloved Gianduja commedia dell’ arte mask of Turin. The product was initially wrapped in foil, and packed in a box showcasing the Ferrero logo and an adorable illustration of two kids with Gianduja under the lid.

As time went on, Ferrero’s business boomed, leading to the official founding of their first factory in Alba in 1946. Unfortunately, tragedy struck in 1949 with Pietro’s passing, but his family carried on his legacy, steering the company towards even greater success.

Now, here’s where things get interesting. Picture a scorching summer day in 1949, when Michele, Pietro’s grandson, noticed something special about the melted Gianduotti – they were incredibly spreadable! This sparked the idea for a creamy, versatile spread that would soon become Nutella.

Fast forward to 1963, and Nutella was officially born, with its catchy name derived from “Nuts” and “bella”, meaning beautiful. By the mid-60s, Nutella was winning hearts with its irresistible taste and creamy texture, paving the way for its iconic glass jar packaging and playful designs.

And the rest, as they say, is history! Nutella has become a beloved household name, adored by millions around the world.

  1. Before you begin, ensure you have a sturdy blender that can handle the job. It’s crucial that the hazelnuts remain above the blender’s blades to ensure a smooth blend. If you’re halving the recipe, pay extra attention to this detail to avoid any blending mishaps.
  2. Β Start by toasting the hazelnuts either in a pan for 5 minutes or in the oven at 160Β°C for 10 minutes. This step enhances their flavour.
  3. Once toasted, transfer the hazelnuts to the blender jar and blend them at high speed. Be patient as this may take several minutes. The hazelnuts will first turn into a powder before releasing their oils. Optionally, add a couple of tablespoons of sunflower seed oil during blending to help the process along. This will gradually transform the mixture into a smooth, creamy paste.
  4. Β After achieving a smooth consistency, add the sugar, soy lecithin, and cocoa powder to the blender. Blend for a few more seconds until everything is thoroughly combined.
  5. While the hazelnut mixture blends, set up a double boiler to melt the chocolate slowly. Once melted, add the hazelnut mixture to the double boiler and stir well. Let it cook for 2 – 3 minutes.
  6. Pour the whole milk into a saucepan and dissolve the powdered milk in it using a whisk.
  7. After cooking, add the milk, powdered milk, and cocoa butter to the mixture. Stir continuously for 5 minutes until you achieve a smooth texture.
  8. Check the consistency of the mixture. If it’s still too grainy, you can strain it through a fine-mesh sieve for a smoother finish.
  9. Return the mixture to the double boiler and cook for another 5 – 6 minutes until it thickens. Remember, the initial consistency will be quite liquid but will thicken upon cooling.
  10. Once cooked, transfer the hazelnut spread into glass jars and let it cool completely at room temperature for several hours. Store it in the fridge for up to 2 weeks.
  11. Allow the cream to come to room temperature or place it near a heat source for a few minutes before serving to regain its creamy texture.
  12. Enjoy your homemade hazelnut spread on toast, pancakes, or straight from the jar!
